How to Choose the Right Size, Lid, Barrier and Display System
A successful sushi package is not simply a fiber tray with a transparent cover placed on top. It is a system in which the food layout, usable tray area, lid headspace, rim geometry, barrier treatment, label and distribution route work together.
Start with Warmpack’s bagasse tray range, but do not approve a size from outside dimensions alone. Load the actual maki, nigiri or sashimi, close the matching lid, refrigerate the pack and repeat the intended transport route. The best bagasse sushi tray is therefore the smallest system that presents the food cleanly, closes securely, controls condensation and survives the real display or delivery window.
The models below are practical starting points, not guaranteed piece-count matches. Final selection requires usable-area and matching-lid confirmation.

Outside length and width are useful for shelf planning and carton calculations, but they do not tell you how much sushi fits inside. Molded-fiber trays have sloped walls, rounded corners and a rim that occupies part of the stated footprint.
Measure the flat food-contact area inside the wall transition. Then record the corner radius and any raised features that reduce usable space. An elongated T3 bagasse tray may use space efficiently for maki rows, while a shallow T024 sushi tray may create a cleaner presentation for nigiri.
“Eight-piece tray” is not a complete specification. Eight small hosomaki pieces require a different footprint from eight uramaki rolls. Nigiri also needs room for the fish topping, which may extend beyond the rice base.
Arrange the actual product, including dividers, garnish, ginger, wasabi and sauce. Record the food footprint, spacing and loading direction. Piece count should be the result of this test—not the assumption that starts it.

Lid height is not the same as usable headspace. The lowest point of a curved or ribbed lid may sit below its advertised maximum height.
Calculate:
Net headspace = lowest internal lid height − maximum loaded food height above the tray reference plane.
Measure the tallest real item, including avocado slices, salmon topping, fried garnish, sauce decoration and label pressure. A T230 combination tray may have enough footprint but still fail if a low lid touches the topping.
A lid that clears the food on a table may flex downward when several packs are stacked. Load the intended stack, hold it for the real staging or delivery period and inspect the lowest pack. For a larger T7 tray system, check both the center and corners because pressure may not be distributed evenly.
The closure depends on rim width, flatness, corner shape, forming tolerance and lid geometry. A lid may appear to fit while the pack is empty but release after chilling, stacking or vibration.
Test the tray and lid as a numbered pair. Close all four corners and both long sides, then inspect for rocking, gaps and partial engagement. Condition several sets in the intended refrigerator before repeating the test.

There is no universally “greenest” lid. The right choice depends on visibility, temperature, handling, local waste infrastructure and the evidence available for the complete package.

Condensation can form when moisture inside the pack reaches a colder lid or when the package moves through changing temperatures. Warm rice packed too early, frequent cabinet opening and an unstable cold chain can all increase fogging or surface droplets.
Control the variables rather than relying on an “anti-fog” label alone:
Pack food at the validated product temperature.
Test the lid in the actual display cabinet.
Reproduce door-opening and restocking cycles.
Inspect clarity, droplets, garnish damage and moisture pooling.
Place labels where condensation will not hide required information or weaken adhesion.
Anti-fog performance is specific to the lid, food temperature, humidity and display duration. Test several T024 chilled-display packs or T230 sushi sets under the intended cabinet cycle.
Packaging tests do not establish food shelf life. Raw fish and cooked rice must remain under the buyer’s HACCP plan and applicable local food-safety requirements.
Sushi may look dry, but the packaging faces moisture from rice, fish oil, pickled ginger, dressings and condensation. Contact time can be as important as the initial food temperature.
An uncoated tray may suit short chilled holds with moderate moisture. A water-based barrier, PLA, PBS or PE layer may provide additional resistance, but each option affects sealing, documentation and end-of-life claims differently. A supermarket pack and a delivery pack may use the same tray but face different risks. Retail prioritizes visibility and shelf facing; delivery adds vibration, bag pressure and repeated handling.
Load the real pack, close it, add the final label and stack it at the intended height. Check whether the tamper label pulls one side of the lid upward or covers the opening tab. Place soy sauce, ginger and wasabi so they cannot slide into the sushi or concentrate pressure on the lid.

Begin with approximately 12–20 tray-and-lid sets per model when screening a new system. Use fresh samples for destructive tests and keep untouched reference samples.

Repeat the test with the final label and tamper seal.
Record temperature, time, stack height, food weight and failure location.
